Sweet Corn and Bean Enchiladas

Sweet Corn and Bean Enchiladas are a tasty and healthy dinnertime solution.

Sweet Corn and Bean Enchiladas

Makes 4 servings
Prep time: 15 minutes • Cook time: 15 minutes

Sweet Corn Enchiladas
6 8-inch whole-wheat tortillas
1 (15-ounce) can reduced
sodium fat-free refried beans, drained and rinsed
½ cup water
2 Tablespoons taco seasoning
½ lb. ground turkey breasts
½ cup reduced-sodium black beans, rinsed and drained
¼ cup fresh sweet corn kernels
1 (10-ounce) can mild, low-sodium red enchilada sauce
2 Tablespoons chopped fresh cilantro
1 small tomato, chopped

1. Preheat oven to 350°F.
2. Place ¼ can of enchilada sauce in bottom of a 9×13 ovenproof casserole dish.
3. Brown ground turkey in large skillet. Reduce heat to medium low and add refried beans, taco seasoning and water to pan. Stir together.
4. Add fresh sweet corn and black beans and cook until corn has warmed and filling has thickened.
5. Add approximately 1⁄3 cup filling to each warmed tortilla. Fold in sides then roll burrito, place in prepared casserole dish, seam side down.
6. Top with remaining enchilada sauce and bake for 15 minutes.
7. Garnish each enchilada with cilantro and chopped tomato before serving.
