The first meal of the day gets some mighty muscle with this Simple Spinach Quiche.
Breakfast is not typically a meal that you get a good dose of vegetables in. We aim to change that with this filling Simple Spinach Quiche. If you’re tight on time in the a.m., prepare this meal the night before and simply put it in the oven while you get yourself and the kids ready the next morning. A hot, veggie-packed breakfast will be done before you know it!
Simple Spinach Quiche
Prep Time: 10 minutes
Cook Time: 45 minutes
1 prepared piecrust (for a 9-inch pie pan)
1 cup milk
2 eggs, beaten
1 ½ cups cheddar cheese, shredded
½ cup fresh Parmesan cheese, shredded
1 10-ounce package frozen spinach, thawed and drained
½ teaspoon salt
¼ teaspoon pepper
1. Preheat oven to 350°F.
2. Line a 9-inch pie pan with crust. Flute edges.
3. In a medium bowl, combine milk, eggs, cheddar cheese, Parmesan cheese, spinach, salt and pepper. Pour into the prepared piecrust.
4. Bake in preheated oven for 45 minutes, or until a knife dipped into the center comes out clean. Let quiche cool for a few minutes and serve warm.
