Holiday Chocolate Cookies

Start with one rich chocolate cookie dough, and by adding different ingredients to the base recipe, you’ll be able to make a batch for everyone. For those who love a classic chocolate cookie, add walnuts for a tried-and-true favorite. From candied ginger to tart, dried cherries, the list of mix-ins is endless. Use this basic recipe and create cookies catered to you and your family’s tastes.

Makes 2 dozen
Prep time: 15 minutes, plus 30 minutes to chill
Cook time: 20-25 minutes
1 ½ cups all-purpose flour
½ cup unsweetened cocoa
powder
¾ teaspoon baking powder
1/8 teaspoon salt
½ cup (1 stick) unsalted
butter, softened
2/3 cup granulated sugar
1/3 cup light brown sugar
1 egg
½ teaspoon vanilla
¼ cup semisweet chocolate,
melted
Optional:
½ cup walnuts, chopped
½ cup candied ginger or dried cherries
½ cup of your favorite mix-in
1. Preheat oven to 350°F.
2. In a medium bowl, sift together the flour, cocoa powder, baking powder and salt. Set aside.
3. Place the butter and both sugars in a bowl or stand mixer, on medium speed, and cream until light and fluffy, about 5 minutes.
4. Add the egg and vanilla and continue mixing for about one minute.
5. Remove the bowl from the mixer and scrape down the sides. Add flour mixture to the butter mixture, gently stirring, just until combined. Add optional
ingredients, if desired. Be sure not to overmix the dough to prevent flat cookies.
6. Gently fold in the melted chocolate until just combined.
7. Roll the dough into a flat disc, cover in plastic wrap and place in the refrigerator for about 30 minutes.
8. Place tablespoon-sized dollops of cookie dough onto a parchment-lined baking sheet.
9. Bake for 20-25 minutes or until cookies are cooked through but still soft and chewy. Serve warm.
