Grilled Lemon Pepper Shrimp is the perfect light, summertime meal.
For a light, refreshing meal, try Grilled Lemon Pepper Shrimp. After marinating the shrimp, it just takes 5 minutes to cook. This dish also goes great alongside a number of healthy side dishes for a well-rounded meal!
Grilled Lemon Pepper Shrimp
Makes 4 servings
Prep time: 10 minutes (plus up to 4 hours to marinate)
Cook Time: 5 minutes
2 Tablespoons olive oil
¼ teaspoon Dijon mustard
2 garlic cloves, minced
Juice of 1 lemon
Zest of two lemons
1 teaspoon ground pepper
½ teaspoon kosher salt
¼ teaspoon crushed red pepper flakes
1 lb. medium (31-35 count per pound) shrimp, washed, peeled and deveined
Small handful chopped fresh basil
4 cups fresh salad greens
1. In a plastic, sealable container, combine olive oil, Dijon mustard, garlic, lemon juice, lemon zest, pepper, salt and red pepper flakes. Whisk to combine. Add the shrimp and toss well. Cover the container and refrigerate. Marinate for up to 4 hours.
2. Heat an outdoor grill to medium high. Add the shrimp in batches, cooking on each side for about 2 minutes, or until the shrimp is just cooked through. Do not overcook.
3. Transfer shrimp to plated salad greens. Sprinkle on chopped fresh basil and serve with lemon wedges.
Shrimp Two Ways
Grilled Lemon Pepper Shrimp makes a great salad topper, but can also be tossed with pasta for a completely different twist.
