Gluten-free Banana Cookies

Gluten-free Banana Cookies are not only delicious, they are bursting with the goodness of rolled oats, bananas, dried fruit and almond meal. Here’s how to make these too-good-to-be-true gluten-free treats.

Makes 3 dozen small cookies
Prep time: 10 minutes
Cook time: 12-14 minutes
3 large, well-ripened bananas, mashed
1 teaspoon pure vanilla extract
¼ cup canola or safflower oil
2 cups gluten-free rolled oats
2⁄3 cup almond meal
1⁄3 cup unsweetened coconut, finely shredded
½ teaspoon cinnamon
½ teaspoon fine grain sea salt
1 teaspoon baking powder
1⁄3 cup semi-sweet chocolate chips
1⁄3 cup white chocolate chips
1 cup dried cherries or blueberries
1. Preheat oven to 350°F.
2. Combine bananas, vanilla extract and oil in a large bowl.
3. In a medium bowl, combine the oats, almond meal, shredded coconut, cinnamon, salt and baking powder. Add dry ingredients to the wet mixture and combine. Add chocolate chips and dried fruit.
4. Drop 2-teaspoon-sized dollops about an inch apart onto a parchment-lined (or Silpat) baking sheet. Note: The dough will not be firm.
5. Bake 12-14 minutes, taking care not to burn the bottoms. Remove from oven and let stand before removing to cool on wire racks.
Homemade Almond Meal and Oat Flour
Grind almonds in a food processor or clean coffee grinder until desired texture is reached. It should be like fine sand; stop before it turns into almond butter! You can also grind oats this way to create your own oat flour.
