Eggnog Pancakes

It seems like the holidays are always about food, food, food. Sometimes it is nice to have a no-brainer kind of cooking day with easy dishes that taste great and require little effort. In answer to the need for simplicity, we have pulled together a few dishes that will allow you to enjoy a meal without too much time in front of the stove.

 

Eggnog Pancakes

 

Serves 4-6

 

Prep time: 5 minutes

 

Cook time: Approx. 20 minutes

 

2 cups all-purpose flour

 

4 teaspoons baking powder

 

½ teaspoon salt

 

¼ teaspoon ground nutmeg

 

2 eggs

 

1 ½ cups eggnog

 

2 Tablespoons butter, melted

 

1. Combine the flour, baking powder, salt and nutmeg in a small bowl.

 

2. In a large mixing bowl, beat the eggs, eggnog and butter.

 

3. Slowly stir in dry ingredients until fully incorporated and moistened. (There will be some lumps.)

 

4. Pour batter by ¼ cup onto a lightly greased hot griddle. When bubbles start to form on the top, gently flip the pancake over to cook on the other side. Cook until cooked through and golden brown.

 

Holiday Taste

 

Give traditional pancakes a holiday twist by adding creamy eggnog to your batter. The flavor of the eggnog is very subtle, yet adds a depth of richness that you don’t find in plain flavored pancakes.
