Easy Sweet Potatoes
Prep time: Approx. 10-12 minutes
Cook time: 1 hour, 20 minutes
Note: It’s easy to prepare this a day ahead.
8 medium sweet potatoes, pre-baked and peeled
¼ cup cream, whipping or half and half
¼ cup brown sugar
¼ cup shredded coconut
¼ cup flour
¼ cup melted butter
1 teaspoon ground cinnamon
1 teaspoon salt
½ cup fresh orange juice
3 Tablespoons grated orange rind (optional)
1. To pre-bake potatoes, preheat oven to 350°F. Place potatoes on a foil lined cookie sheet, and bake for approximately 1 hour (depending on size) or until soft.
2. Remove the potatoes from oven and let cool. Peel potatoes and put them in a bowl with remaining ingredients. Beat with a hand mixer. Heat in the microwave just before serving.
3. Optional topping: Heat oven to 375°F. Combine ⅓cup brown sugar, ¼ shredded coconut, ¼ cup flour, and ¼ cup melted butter and spread over the top. Bake for 20-25 minutes.
