You can sneak veggies into breakfast when you serve this tasty Broccoli Slaw Quiche. Easy-to-use packaged broccoli slaw is the secret ingredient, giving a traditional egg quiche an added veggie boost.
Broccoli Slaw Quiche
Prep time: 10 minutes • Cook time: 20 minutes
4 large eggs
1 cup half-and-half
2 teaspoons minced garlic
3 drops hot pepper sauce
1 (9-inch) unbaked pie crust
1 cup broccoli slaw
1 ½ cups shredded mild cheddar cheese
Salt and pepper to taste
1. Preheat oven to 375°F.
2. For filling, whisk together eggs, half-and-half, garlic and hot pepper sauce in a large bowl until smooth.
3. Pour filling into pie crust that is placed in a prepared 9-inch pie pan.
4. Sprinkle broccoli slaw evenly over egg mixture. Top with cheese.
5. Bake for 20 minutes or until eggs are set and firm.
Make It Ahead!
On a hectic holiday morning, you’ll be glad to have this quick breakfast solution.
Bake the quiche a day or two before you plan to serve it. After it’s cooked, set it on a baking rack, uncovered, to cool completely. Then seal the top with plastic wrap and store it in the refrigerator.
To reheat, preheat the oven to 350°F. (If you are using a glass pan, such as Pyrex, make sure to bring the quiche to room temperature before placing in the hot oven or the pan may crack.) Remove the plastic wrap and heat quiche for 15-20 minutes or until warmed through.
