Baked Banana Crumble

Baked Banana Crumble

Makes 4-6 servings
Prep time: 15 minutes
Cook time: 20 minutes

¾ cup orange juice
1 teaspoon vanilla extract
4 ripe, firm bananas, peeled
½ cup flour
½ cup quick cooking oatmeal
¾ cup brown sugar
½ teaspoon cinnamon
½ teaspoon salt
6 Tablespoons cold butter, cubed into 6 pieces

1. In a small bowl, combine orange juice and vanilla. Set aside.
2. Slice bananas lengthwise then into 4 pieces and place cut side up in four individual buttered baking dishes.
3. Combine flour, oatmeal, brown sugar, cinnamon and salt. Add butter. Using a pastry blender or two knives, blend until mixture resembles small peas.
4. Drizzle bananas with orange juice mixture. Spoon crumble mixture over fruit.
5. Bake at 375°F for 15-20 minutes. Serve warm topped with a scoop of vanilla ice cream.
